ntil not very long ago, ordinary people’s diets were very plain and monotonous for today’s standards. People ate whatever was in season and whatever could be preserved.
Meat, fish and eggs were eaten only on special occasions. Beer and other
alcoholic beverages, however, were consumed everyday because people had
figured out that they
were safer than water. Most dishes that are nowadays considered “ethnic” were derived from peasant cuisines, many of them once eaten on special occasions.
Historical
recipes of ordinary dishes are difficult to come by, because few
people were literate
before the 19th century. However, today’s versions and especially recipes written down during the last one or two centuries
give us an idea of what the original versions must have been like..
