Soup Dumplings by Clara Kramer-Freudenthal
Boil up milk, butter, nutmeg and salt together. Take the pot off the heat, and pour in the flour in one go. Stir to make a lump and reheat for a minute. Immediately put it into a dish and stir in the egg. Dip a teaspoon in cold water, and spoon off dumplings. Cook [the dumplings] in boiling salt water. They float on top when they are cooked. Serve in a dish on the table. |
